strawberry rhubarb pie, sweet with a little bit of tart

this one.  it’s a sleeper on the menu, but it’s so good!!  yes we use frozen rhubarb.  nobody got time to peel rhubarb.  and, let’s be honest.  we live in texas.  

FILLING

4 cups of frozen rhubarb pieces

3 cups of frozen strawberries

1 cup sugar

1/2 cups of flour

1 TBSP melted butter

1 tsp of lemon juice

TOPPING

1 cup brown sugar

1 tsp cinnamon

1 cup old fashioned oats…not quick

1/2 cup flour

1/4 tsp salt

1/2 tsp of nutmeg

6 TBSPS melted butter

combine all ingredients.

combine fruit in large pan.  cook ’til turns to natural color.  or doesn’t look frozen.  add remaining ingredients and cook ’til thick.  stirring constantly.  pour into 10″ pie shell.  top with crumble topping and bake for 45 mins at 350.
