Happppiest THANKSGIVING to y’all!!
somehow among the 1000’s of pies we are baking for thanksgiving, we have to have our traditional family dinner. it would be so easy to just skip it all & be simple, but i crave the stuffing & giblet gravy. this morning i asked which recipes y’all would want & the winners were, brown sugar green beans & cornbread stuffing. we have a wonderful recipe box full of family, cafe & friends recipes that has all of these. we are nearly out of the boxes, FOREVER. think we have 6. seriously. here’s to writing a new cookbook or 3, but for now, here are some recipes for y’all’s family table.
Granny’s Cornbread Stuffing
1/2 cup butter
1 cup chopped yellow onions
1 cup chopped celery
2 large eggs
6 cups toasted bread & crumbled
1 batch cornbread, prepared as per package instructions
1/2 cups walnuts, chopped
3 Tbsps. poultry seasoning
1 tsp. salt
1 tsp. pepper
4 cups chicken stock
Preheat oven to 350F
Saute onions & celery in the butter…cook ’til translucent, not browned. Turn off heat. Toss remaining ingredients, add enough chicken stock to moisten. Pour into casserole dish, cover & bake for 1 1/2 hours.
Brown Sugar Green Beans
2#’s fresh or frozen green beans…thaw if frozen.
1 cup brown sugar
1 Tbsp chopped garlic
1/2 pound bacon, chopped in 1 in pieces
1 stick butter
Cook bacon & drain. Melt butter, add garlic & sugar ’til completely melted. Add bacon to green beans & then pour sauce over the green beans.
