veggie pie, a.k.a. veggie quiche
i absolutely love this pie. who says you can’t have pie for breakfast? and, you don’t have to be a vegetarian to eat this pie!!
2 tbsps. dill butter (in the cafe cookbook or just use butter & add some dill & chopped garlic)
1/2 cup diced red onions
1 cup sliced mushrooms
10 oz. fresh or frozen spinach
3 cups of eggs (whisked)
1 cup milk
4 oz crumbled feta
4 oz american cheese slices (torn into pieces)
4 oz shredded swiss cheese
2 cups shredded cheddar
1 tbsp worcestershire sauce
1 cup flour
1 cup diced sun dried tomatoes
1 tbsp ms. dash
sauté the dill butter, onions & mushrooms ’til translucent, set aside. mix remaining ingredients & add sautéed items. divide equally in 2 10″ pie shells. bake at 300 degrees for 40 to 50 mins, or ’til crust is golden brown & firm.
